Perfection Salad--ZERO CALORIES!
Perfection SaladThis recipe is from The Weigh of all Flesh, by Reuben D. Chier, M.D., my uncle. We published it in 1953. It is a comprehensive diet guide, which includes calorie charts, an ideal weight caloric intake guide, a 7 day and a 15 day diet plan, low-cal recipes, exercises, and a calorie counter index. This recipe is Perfection Salad, which has a calorie count of ZERO. Isn’t that fabulous ? Give it a try.
• 1 envelope gelatin
• 1 C hot water
• 1/4 C cold water
• 1/4 C vinegar
• 1 T lemon Juice
• 2 t sucaryl (or your favorite, safe sugar substitute)
• 1/2 t salt
• 3 stalks celery, chopped
• 1 green pepper, chopped
• 1 pimento, chopped
• 1/2 shredded cabbage

Soften gelatin in cold water and then dissolve in hot. Add all other ingredients except vegetables and cool. Add vegetables and place in mold. Chill until firm and unmold on salad greens.
